Reopening Guidance for Hospitality
Before kick-starting your Kitchen Extract System following lockdown, use our tips & suggestions to avoid burning out your fan
Scottish hospitality will face significant operating restrictions until at least June under the country’s roadmap out of lockdown from Covid-19. This will allow pubs and restaurants to begin reopening from late April. To ensure your business has the best possible opportunity to succeed as restrictions ease, with no unforeseen issues hampering reopening’s, Perfect Service Solutions is in a position to provide advice and guidance.

General Fan Maintenance
Fans, motors and drives may have become heavily contaminated, especially if oil or grease has leaked, and allowed to solidify due to non-use. Impellers may have heavy deposits on the blades. Fans must be kept clean and dust-free for optimum use, and to avoid burning out of the fan motor. The windings of a motor are closely wrapped and separated only by a thin layer of insulating lacquer. This lacquer can deteriorate due to age, weather changes and heat. The insulation generally lasts a lifetime but can lose its properties more quickly if there is a lot of grease, dirt and dust.
Kitchen extract fans generally operate under increased strain and are therefore particularly prone to burn-out due to the heat, grease-laden and oily environment they operate within. The likelihood of this occurrence increases with age. This is more prevalent if there is a significant build-up of heat modified oil, due to a lack of regular cleaning. A clean motor will dissipate heat more effectively than a dirty motor, therefore lasting longer. Regular cleaning also prevents imbalance which leads to increased vibration.

Tips & Suggestions for Re-opening
Prior to operation, due to such a long time out-of-service, fans should be reviewed and checked. This can negate any issues arising upon site opening. It is essential to ensure fans are electrically isolated and locked off before carrying out inspection or cleaning works. As fans and systems have not been in operation for a length of time, it is likely any grease that may have been around the fan and/or blades has solidified. Starting the fan with this is likely to burn out the fan motor. It is recommended the fan should be checked prior to operation, if any grease deposits are visible, these can be made malleable again with the use of a heating instrument (e.g. Heat Gun/Hair Dryer) to allow fan to operate. If the fan motor is buzzing upon turning on, it is likely to be blocked. This should be checked by an appropriate professional.
