Whilst the law covering food safety are detailed and complex there is guidance that helps you to comply which can be straight forward and applied with ease. The following list highlights the relevant pieces of legislation:

  • the Food Safety Act 1990 â€” provides a framework for all legislation
  • Regulation (EC) No. 178/2002 — contains definitions and basic principles for matters relating to hygiene
  • the Food Hygiene (England) Regulations 2013 and the Food Hygiene (Northern Ireland, Scotland and Wales) Regulations 2006 — dealing with general food hygiene requirements in the UK, listing offences and enforcement powers
  • Regulation (EC) No. 852/2004 on the hygiene of foodstuffs — this contains the main hygiene requirements for food businesses including the need for food safety management based on the principles of Hazard Analysis and Critical Control Points (HACCP)
